Nestled in the heart of Derby, Kansas, Layali offers a culinary journey through the Mediterranean, blending flavors and traditions from vibrant locales like Beirut, Lebanon, and the serene shores of Nicosia, Cyprus.

My culinary story begins amidst the lively streets of Beirut, where the scents of my grandmother's kitchen fueled my lifelong love affair with food. Spending cherished moments by her side, relishing her exquisite pastries, ignited my passion.

Life's path led me to the tranquil shores of Nicosia, Cyprus, where I immersed myself in the island's rich culinary tapestry for five unforgettable years. Yet, it was the warmth of family gatherings, intertwined with my mother's holiday treats, that remained etched in my memories.

In August 1993, at just 13 years old, I embarked on a new chapter in Wichita, Kansas. Embracing the art of baking at La Galette French Bakery & Deli, a cherished family establishment founded by my grandparents, I learned the essence of dedication and hard work.

As Layali prepares to open its doors, I carry the invaluable lessons and legacy of La Galette. While my brother now leads our family's bakery, preserving our commitment to excellence and tradition, I also draw inspiration from mentors like my uncle John, a maestro of fine dining.
